Our organic raw cacao powder is sustainably grown in Ecuador from Arriba Nacional cacao beans. Arriba Nacional beans are widely regarded as the worlds finest cacao variety, organically cultivated in the mineral rich, high elevation volcanic soils of the Ecuadorian mountains. Once harvested the pods are emptied of their bean and pulp content and allowed to ferment over several days in the ambient tropical climate. A vital stage which develops the rich floral aroma and flavour. The beans are then carefully sun dried over several days, separated from their shells and milled into an ultra-fine paste, before being pressed through fine sieves to remove the cacao butter and form the cacao "cake". The cake is then gently broken and sifted into the delicious powder we love. Through out the entire processing operation the temperature is constantly monitored to ensure the product stays below 118°F.
Raw cacao is high in magnesium, potassium and iron and is a source of copper (see nutrient chart tab for values).

How to use
Raw cacao powder is excellent for making raw chocolates, cakes and desserts. It can be added to fruit smoothies and its bitter qualities can even complement green vegetable juices.
Average serving size: 10 grams (2 teaspoons), although there are no nutritional restrictions on how much one can have during the course of a day (how wonderful!?!)
As with introducing all new foods, start small and work your way up over a period of time that feels best for you as an individual. A small serving would be equal to half a teaspoon.
